Apple Pie.

Classic homemade apple pie with a fragrant cinnamon filling and a buttery, flaky crust.

Instructions

  1. Combine flour, salt and sugar. Rub cold butter with fingertips until mixture resembles breadcrumbs.

  2. Add egg and ice water; quickly bring together. Divide in two, wrap and refrigerate 1 hour.

  3. Peel and thinly slice apples. Toss with sugar, cinnamon, lemon juice and cornstarch.

  4. Preheat oven to 190°C. Roll out one piece and line a greased 22–24 cm tin.

  5. Pour in the apple filling. Roll remaining dough and lay over the top, crimping edges to seal.

  6. Brush with egg yolk and milk; cut 4–5 slits to vent.

  7. Bake 45–50 minutes until golden. Cool before slicing.

Hazel's Note

Cold butter is essential for a flaky crust. Don't over-knead — too much gluten development makes the pastry tough.
