The Story

Instructions

7 Steps
  1. Preheat oven to 200°C (390°F).

  2. Mix tomato paste with olive oil, garlic, thyme, paprika, chili flakes, salt and pepper.

  3. Rub the mixture all over the chicken.

  4. Slice potatoes and onions into large chunks and spread in a roasting pan.

  5. Place the chicken on top.

  6. Roast for 60–70 minutes until golden and cooked through.

  7. Turn the chicken halfway through for even browning.

Hazel's Note

Drizzle a little extra oil over the potatoes for extra crispness. Rest the chicken for 5 minutes after roasting to keep it juicy.
