The Story
Oven-baked chicken and potatoes is the ultimate weeknight hero of Turkish home cooking — simple to prepare, loved by everyone, and deeply comforting.
The aroma of freshly roasted chicken fills the whole house and makes it feel like home.
Preheat oven to 200°C (390°F).
Mix tomato paste with olive oil, garlic, thyme, paprika, chili flakes, salt and pepper.
Rub the mixture all over the chicken.
Slice potatoes and onions into large chunks and spread in a roasting pan.
Place the chicken on top.
Roast for 60–70 minutes until golden and cooked through.
Turn the chicken halfway through for even browning.
Hazel's Note
Drizzle a little extra oil over the potatoes for extra crispness. Rest the chicken for 5 minutes after roasting to keep it juicy.
