
Courgette Fritters (Kabak Mücveri)

A traditional Turkish bulgur salad made with fine bulgur, tomato paste, pomegranate molasses, and fresh herbs — a refreshing mezze staple.
The Story
Kısır is a beloved mezze enjoyed across Turkey. Each region adds its own twist, but the bright freshness of pomegranate molasses and herbs remains constant.
A bowl of kısır brings the freshness of summer to any table.
Place bulgur in a large bowl and pour boiling water over it; let it swell for 20 minutes.
Once cooled, add tomato paste and red pepper paste; knead well.
Add olive oil, pomegranate molasses and lemon juice; knead again.
Season with cumin, chili flakes and salt.
Fold in chopped spring onions, parsley, diced tomatoes and cucumber.
Taste, adjust seasoning and serve.
Hazel's Note
Kısır tastes even better after resting. Refrigerate for 15–20 minutes before serving to let the flavors meld together.
