
Turkish Baked Rice Pudding (Sütlaç)
The beloved Turkish baked rice pudding — silky smooth with a lightly caramelised top, served cold.

Cream-filled choux pastry puffs drenched in warm chocolate sauce — the ultimate Turkish party dessert.
Bring water and butter to a boil. Add all the flour at once and stir vigorously until the dough pulls away from the pan.
Remove from heat and cool slightly. Beat in eggs one at a time, mixing well after each.
Pipe small balls onto a lined tray using a piping bag.
Bake at 200°C for 25–30 minutes until puffed and golden. Turn off oven and rest inside for 10 minutes.
Once completely cool, fill each puff with whipped cream.
Make sauce: heat cream and pour over chopped chocolate; stir until smooth.
Pile filled profiteroles and pour warm chocolate sauce over them before serving.
Hazel's Note
Never open the oven mid-bake — the choux will collapse. Ensure whipped cream is very stiff before filling to prevent sogginess.
