
Turkish Baked Rice Pudding (Sütlaç)
The beloved Turkish baked rice pudding — silky smooth with a lightly caramelised top, served cold.

A classic Turkish semolina cake soaked in lemon syrup — moist, light and delicately sweet.
Prepare the syrup: boil sugar, water and lemon juice for 10 minutes; cool completely.
Beat eggs and sugar until pale and fluffy.
Mix in yogurt, melted butter and vanilla.
Fold in semolina, flour and baking powder.
Pour into a greased 30×20 cm tray.
Bake at 180°C for 30–35 minutes until golden.
Pour cooled syrup over the hot revani straight from the oven.
Once absorbed, garnish with coconut or pistachio and cut into diamonds.

Hot cake + cold syrup is the rule — same-temperature combinations make the cake waterlogged.
