Revani (Semolina Cake).

A classic Turkish semolina cake soaked in lemon syrup — moist, light and delicately sweet.

Instructions

  1. Prepare the syrup: boil sugar, water and lemon juice for 10 minutes; cool completely.

  2. Beat eggs and sugar until pale and fluffy.

  3. Mix in yogurt, melted butter and vanilla.

  4. Fold in semolina, flour and baking powder.

  5. Pour into a greased 30×20 cm tray.

  6. Bake at 180°C for 30–35 minutes until golden.

  7. Pour cooled syrup over the hot revani straight from the oven.

  8. Once absorbed, garnish with coconut or pistachio and cut into diamonds.

Hot cake + cold syrup is the rule — same-temperature combinations make the cake waterlogged.
