The Story

Sigara böreği finds its place at every Turkish gathering — from dinner parties to picnics to iftar tables. The crunch of thin pastry meeting salty cheese is simply irresistible.

One crunch, one bite — few mezzes beat a perfectly fried sigara böreği.

Instructions

7 Steps
  1. Mix cheese, egg, parsley and chili flakes to make the filling.

  2. Cut yufka into long strips, about 8–10 cm wide.

  3. Place 1 tsp filling at one end of each strip.

  4. Fold in sides and roll up tightly like a cigar. Dampen the end to seal.

  5. Heat oil to medium temperature.

  6. Fry rolls until golden on all sides.

  7. Drain on paper towels and serve hot.

Hazel's Note

Seal the ends properly or the filling will escape during frying. If oil is too hot, the outside burns before the inside heats through.
