The Story

Simit is inseparable from Istanbul mornings. Tea in one hand, simit in the other — baking it at home gives this simple ring a whole new meaning.

The smell of freshly baked simit is the best alarm clock.

Instructions

8 Steps
  1. Mix yeast, sugar and warm water; let rest 5 minutes until foamy.

  2. Combine with flour, salt and oil; knead into a soft dough.

  3. Cover and let rise 1 hour.

  4. Divide into 8 pieces. Roll each into a long rope and join ends to form a ring.

  5. Dip into the molasses mixture; let excess drip off.

  6. Press all sides into sesame seeds to coat.

  7. Place on a lined tray and rest 15 minutes.

  8. Bake in a preheated 210°C oven for 20–25 minutes until golden.

Hazel's Note

The molasses wash gives simit its color and helps sesame adhere. A slightly soft dough keeps the inside fluffy.
