  1. Clean mushrooms; tear larger ones into pieces by hand.

  2. Melt butter in a wide pan until foaming.

  3. Add mushrooms and sauté over high heat without stirring for 2–3 minutes.

  4. Add garlic and cook 1 more minute.

  5. Season with salt, pepper and lemon juice.

  6. Remove from heat and scatter fresh parsley.

  7. Serve hot.

Cook mushrooms over high heat without crowding the pan — too many at once causes steaming instead of browning.
