Autumn · July 1, 2026
Kanlıca mushrooms sautéed in butter with garlic, lemon and parsley — a simple and deeply flavorful Turkish appetizer.
The Story
Kanlıca mushrooms are autumn's gift from Anatolian forests. A brief sauté in butter — simple yet deeply aromatic — earns them a place at even the most lavish table.
Mushrooms and butter — proof that simplicity is its own luxury.
Clean mushrooms; tear larger ones into pieces by hand.
Melt butter in a wide pan until foaming.
Add mushrooms and sauté over high heat without stirring for 2–3 minutes.
Add garlic and cook 1 more minute.
Season with salt, pepper and lemon juice.
Remove from heat and scatter fresh parsley.
Serve hot.
Hazel's Note
Cook mushrooms over high heat without crowding the pan — too many at once causes steaming instead of browning.
