The Story

Zeytinyağlı yeşil fasulye is a summer staple and one of the simplest expressions of home cooking love. The scent as it slow-cooks draws everyone to the kitchen.

Instructions

7 Steps
  1. Heat olive oil in a pot. Sauté onion until soft.

  2. Add tomatoes and cook until they break down, about 5 minutes.

  3. Add green beans and stir to coat.

  4. Season with salt and sugar.

  5. Add a small splash of water (4–5 tbsp) if the beans look dry.

  6. Cover and cook over low heat for 35–40 minutes until beans are very tender.

  7. Serve warm or at room temperature.

Hazel's Note

The secret to zeytinyağlı: very little water and long, slow cooking. The beans' own moisture and the olive oil create the sauce.
