Traditional Turkish stuffed flatbread filled with white cheese and spinach, cooked on a griddle until golden and crispy.
The Story
The women of rural Anatolia passed down the art of gözleme for generations — rolling sheets paper-thin over open fires.
At its simplest, gözleme is at its best.
Combine flour, salt, water, yogurt and olive oil into a soft dough. Rest 20 minutes.
Divide into 4 equal balls.
Roll each very thin — as thin as a sheet of paper.
Spread cheese and spinach over one half; sprinkle with chili flakes if using.
Fold the other half over the filling.
Cook on a dry preheated griddle or pan until golden on both sides.
Brush with butter and serve hot.
Hazel's Note
The thinner the dough, the lighter the gözleme. Too hot a pan burns the outside; too cool dries the dough without color.
