The Story
Spinach börek begins with the first fresh spinach of spring — deep, vivid green leaves, not the pale, limp sort. Made properly, a börek like this brings smiles to everyone at the table. For breakfast, or as a mid-morning snack, a slice is always the right decision.
Spinach börek is spring pressed into a baking tray.
Preheat oven to 180°C.
Sauté the onion in olive oil until soft. Add the spinach and cook for 3–4 minutes until wilted. Season and set aside to cool, then mix in the crumbled cheese.
Whisk together the eggs, milk and melted butter.
Lay one filo sheet in a greased tray; brush with the egg mixture. Add a second sheet and spread the spinach filling. Seal with remaining sheets, brushing each with the egg mixture.
Pour the remaining egg mixture over the top. Scatter sesame or nigella seeds.
Bake for 30–35 minutes until deep golden. Serve hot or warm.
Hazel's Note
Drain the spinach very well after wilting — the cheese adds its own moisture and you want the börek crisp, not soggy. The egg-milk-butter mixture between the layers acts as a glue and helps the börek puff up beautifully.
