The Story
Popcorn was discovered thousands of years ago by the Aztecs of Central America and has since become one of the world's most beloved snacks. With just one main ingredient and infinite variations, the right heat and the right fat lift it to an entirely different level.
Right heat, right fat — that's the whole secret to perfect popcorn.
Heat a large heavy-bottomed pot with a lid over medium-high heat.
Add the oil and once melted, drop in 2-3 kernels and put the lid on.
When those kernels pop, the oil is ready — pour in all remaining kernels.
Cover and gently shake the pot to coat every kernel in oil.
When popping is rapid, slightly reduce heat; wait until pops slow to one every 2-3 seconds.
Remove from heat and carefully lift the lid away from you. Immediately add salt and your chosen flavouring and toss well.
Transfer to a large bowl and serve hot.
Hazel's Note
Add all kernels at once so they pop evenly. A thin-bottomed pot may scorch some kernels. Add flavouring immediately while hot so it sticks. If using butter, melt it separately and drizzle over at the end.
