
Turkish Spinach Börek (Ispanaklı Börek)

Classic Turkish fried eggs cooked in butter until crispy on the edges and runny in the middle — perfect with sucuk or white cheese.
Heat a small pan over medium-low heat.
Add butter and wait until it begins to foam.
If using sucuk, fry slices first for 1–2 minutes.
Carefully crack eggs into the pan, leaving space between them.
Cook until whites are set but yolks remain runny.
Season with salt and pepper, serve immediately.

Low heat lets the whites cook without burning the base. Crack the eggs before the butter starts to brown.
