Turkish basil sherbet is a beloved example of the traditional sherbet culture that has been enjoyed in Türkiye for generations. The fragrant purple basil and vibrant color come together with the refreshing acidity of lemon to create a drink that is as beautiful as it is flavorful. Instructions

Gently wash the basil and drain well. Place the basil leaves and tender parts of the stems in a large pitcher or heatproof bowl.

Add the sugar and gently rub the basil with the sugar for a few minutes to release its aroma.

Add the cloves and cinnamon stick.

Pour the hot water over the basil and stir gently. Cover and let the mixture steep for about 10 minutes.

Squeeze in the lemon juice and add a few thin strips of lemon zest, avoiding the bitter white pith.

Let the sherbet cool to room temperature, then strain it through a fine-mesh sieve to remove the basil and spices.

Refrigerate for at least 2 hours until thoroughly chilled.

Serve cold over plenty of ice, garnished with lemon slices and fresh basil leaves.

For me, the key to a good basil sherbet is never boiling the basil. Steeping it briefly in hot water helps preserve its delicate aroma and beautiful color. Adjust the amount of lemon to your taste; if you prefer a more tangy drink, a little extra lemon juice adds a wonderful freshness. Serve it well chilled with plenty of ice, especially on warm summer evenings.
